Step 1
In a medium-sized bowl, mix together the ground coffee, brown sugar, kosher salt, chili powder, paprika, garlic powder, onion powder, black pepper, dried thyme, cumin, and cayenne pepper.
Step 2
Pour in the bourbon and mix until the dry rub is moistened and forms a paste-like consistency.
Step 3
Rub the dry rub all over the surface of the brisket, making sure to coat it evenly and thoroughly.
Step 4
Allow the brisket to marinate in the dry rub for at least 2 hours, or overnight for best results.
Step 5
Preheat your smoker to 225°F and place the brisket on the grill, fat side up.
Step 6
Smoke the brisket for approximately 1 hour per pound, or until it reaches an internal temperature of 195-205°F.
Step 7
Remove the brisket from the smoker and allow it to rest for at least 30 minutes before slicing and serving.
