Another family favorite. Prepare this one the day before serving because it is best when warmed up the next day.

Instructions
Step 1
Sauté the dry rice in half of the butter until it starts to get quite brown.
Step 2
Add the onions and mushrooms and continue to sauté. This will slow the browning process in the rice.
Step 3
When the mushrooms and onions are done, add the rice mixture to a 4 litre oven safe pan.
Step 4
Add the liquids, oregano, and the remaining butter. Stir well.
Step 5
Bake uncovered at 425 deg. F for about 1 hour (or until all the liquid is absorbed), stirring often towards the end.
Step 6
Allow to cool and then refrigerate.
Step 7
The next day, heat in a covered pan for 1 hour at 325 degrees F.
Step 8
Add salt and pepper to taste.
