Buffalo chicken stuffed peppers

These stuffed peppers are filled with a buffalo chicken mixture for a flavorful low carb recipe. Swap blue cheese for cheddar or mozzarella if you prefer.

Instructions

Step 1
Preheat oven to 350 degrees

Cut the bell peppers into halves. Place the pepper halves in a 9x13 baking dish and set aside.
Step 3
In a mixing bowl add the chicken, cream cheese, 1/4 cup of the cheddar, mozzarella, hot sauce and ranch mix to a mixing bowl. Stir until well combined.
Step 4
Spoon the mixture evenly into the pepper halves.
Step 5
Add one tablespoon of water to the bottom of the baking dish. Cover the pan tightly with aluminum foil.
Step 6
Bake for 25 minutes or until the peppers have softened to your liking.
Step 7
Remove the foil. Sprinkle the remaining cheese over the peppers. Set your oven to broil. Broil for 1 minute to melt the cheese.
Step 8
Sprinkle with chives just before serving. Drizzle with ranch dress or blue cheese dressing, if desired.
