Anguillan Jonny Cakes
This recipe was created by Ethne Richardson, from Palm Grove Bar and Grill, which overlooks the sea and is famous for its Jonny Cakes! The recipe was submitted to Cook the Commonwealth by Fedalia, a former Miss Anguilla who now works in the Public Health division at Birmingham City Council. She says - "a definite favourite - they are delicious."

Instructions
Step 1
Mix dry ingredients together. Make a well in the flour, add oil, then water. Mix together. Add more or less water. You do not want a sticky dough. Knead until smooth.
Step 2
Cover with a cloth and rest for about 15 minutes.
Step 3
Cut in small pieces and make smooth balls. On a floured surface, flatten balls with a rolling pin.
Step 4
Fry in hot deep oil until golden brown on each side, about 10 minutes.
