Two Main Ingredient Leftovers Hash for Two

Naturally, use anything you want for this. My husband had fingerling potatoes, bacon, & eggs for breakfast. Leftover? About 6 potatoes & 3 pieces of bacon.
This project began as I wracked my brain to figure out a side using the leftover breakfast w/ 2 chicken thighs from the previous night.
This is my solution...

Ingredients
2 servings
Ingredients Are Approximate (I don't measure unless baking)
6Fingerling potatoes
4bacon strips
cooked
0.5red bell pepper
Jarred
3 Tbspgreen chiles
or to taste
4 piecesSourdough bread
toasted dark, optional
seasoning
oil
Any high heat
butter
Aged gouda cheese, or whatever you have on hand
Instructions
Step 1
1. Coarsely chop the potatoes and bacon. Keep separate
Step 2
2. Put your choice of high heat, sauteing oil in sauté pan. Heat on medium until hot (I prefer stainless steel but I used to Sous Chef)
Step 3
3. Add potatoes, jarred (or fresh) red bells, & green chiles and sauté for a few minutes. Add previously cooked bacon. Stir & move food around in pan to prevent sticking. Add a Tbsp of butter near the end (if you like your butter).
Step 4
4. Add whatever seasonings you have on hand. I used "Cavender's Greek Seasoning", "Pinch Perfect" (like Mrs. Dash), & a dash of "Aw Shit", a local hot seasoning here in Texas. Salt & pepper to taste. Stir & shake pan to incorporate seasonings
Step 5
Top with Gouda cheese, or whatever you have on hand. Top with crusty bread croutons, if wanted. Place pan in oven preheated to 400 degrees for 5 minutes or until cheese is melted.
Step 6
Enjoy with store bought chicken warmed in oven for 10-15 minutes (add a good dose of Texas Pete hot sauce prior to reheating, you'll be glad you did!)
