Perfect for a game day snack. I made this for the Super Bowl and used a rotisserie chicken instead of cooking the chicken. I also used coconut cream instead of full fat coconut milk because I couldn't find it in the store. It turned out really good and will definitely be made by me again.

Step 1
Preheat the oven to 425 degrees. Add chicken breast to a baking dish and sizzle with olive oil, salt, and pepper. Bake 20-25 minutes or until chicken is cooked through. Remove chicken from oven and use two forks to shred the meat.
Step 2
Add the mayonnaise, coconut milk, buffalo sauce, vinegar, lemon juice, garlic powder, onion powder, paprika, and salt to a mixing bowl. Whisk all of the ingredients together until well combined
Step 3
Add the shredded meat to the buffalo sauce mixture and stir until well combined.
Step 4
Pour the dip into a 9 inch baking dish and then bake at 425 degrees for 20-25 minutes or until the dip is bubbly. Remove the dip from the oven and let it cool for a few minutes until serving woth your favorite veggies and chips. Enjoy!
