Instructions
Step 1
Wash and soak rice for at-least half hour
Step 2
Slice the onions and add to some oil and fry till they change colour
Step 3
Add ginger and garlic paste and cook for a couple mins
Step 4
Add sliced tomatoes, chopped green chillies and all the spices (salt, red chilli flakes, cumin, coriander and turmeric powder along with 1 packet sindhi biryani mix and 1/2 packet bombay biryani mix). Mix and cook masala for a few mins
Step 5
Wash and add the chicken to masala and cook on high heat until it changes colour
Step 6
Cover and cook on low heat for 15mins. After that, turn heat high, add 2tbsp yoghurt and cook masala for a few mins until it thickens to the right consistency and oil comes up
Step 7
While chicken cooks on low heat, boil water in kettle and add to a big pan along with 4.5tsp salt and some whole garam masala (black peppercorns, whole zeera, black cardamom pods, cinnamon stick, curry leaves). Ensure the pan is big enough for rice as rice boils better in a bigger pan so it doesn’t stick together or break. Add rice to boiling water and cook to 90% doneness (my rice takes 15mins to cook fully so i cook for 12mins)

Drain the rice once done

Layer the biryani in the rice pan with the masala at the bottom, boiled rice, masala and chicken, then boiled rice then masala and chicken until masala finishes and your top layer is just boiled rice

Add slices of lemon, few mint leaves and few drops of orange and red food colour and cover and cook on low heat for 5-7mins
Step 11
Take some of the decorative stuff from the top layer and set it aside and mix rest of the biryani. Sprinkle some white and coloured rice back on top of your serving tray and add mint leaves and lemon slices to make your dish look more presentable
Step 12
(Tip: chop onions first, once they are cooking, chop tomatoes and once masala is cooking, clean and wash the chicken. Also, once chicken is cooking on low heat, boil your rice. This will save you so much time!! However, If it overwhelms you, feel free to cut and prepare everything beforehand and cook step by step)
