As an adult I have trouble eating my vegetables but once I found this recipe and made it my own. I always looks forward to days I can sneak in Carrot Vichy into my dinner as a side dish I feel like I am being a responsible adult. This carrot dish has butter, salt and a pinch of vanilla.

Instructions
Step 1
Place carrots in a saucepan. Add water to barely cover.
Step 2
Add butter, salt, and sugar and vanilla to carrots and water in pot.
Step 3
Bring water just to a boil and reduce heat and simmer until tender and water is nearly evaporated. If done properly, this should happen at the same time. Toss the carrots so they are well coated with the glaze in the pan.
Step 4
Season with pepper to taste and serve. Add more vanilla for taste if needed.
