Pistachio Nescafe Cake (no bake cake!)

I’m levelling up my last years viral Nescafe Cake to a pistachio one, with an addition of cream cheese for a creamier texture. It is so delectable and not overly sweet at all. I love how light this dessert is especially after breaking my fast during Ramadan. You should definitely add this to your iftar table!

Instructions
Step 1
In a large mixing bowl whip cold heavy whipping cream for a few minutes until it reaches stiff peaks.
Step 2
Add the pistachio spread cream cheese, and vanilla and continue to mix for another few minutes, scraping the sides in between, until it reaches stiff peaks. Set aside.
Step 3
In a small bowl mix boiling water with instant Nescafe coffee. Make sure all the granules are melted through.
Step 4
Dollop about 2 tbsp of the whip cream mixture on the bottom of a 9x13 pan and spread it. Dip cookies in the coffee mixture and quickly set it in the prepared pan. Keep doing this until you run out of space.
Step 5
Smooth over the cookies about a cup of the whip cream mixture. Spread it out evenly. Sprinkle crushed pistachios. Keep repeating this process until your last layer is the whip cream. Garnish with pistachios however you like.
Step 6
Let it set in the fridge for at least 6 hours, or best overnight. Serve cold.
