Instructions
Preheat oven to 350 F
Step 1
Line two baking pans with parchment paper or silicone baking mats; set aside.
Step 2
In med. bowl, whisk together flour, baking powder, & salt; set aside.
Step 3
In sm. bowl, combine sugar & orange zest, rubbing them together with your fingers until the zest is completely incorporated into sugar.
Step 4
Using mixer on med., cream together butter & zest-infused sugar (3 min.) until light & fluffy. Add egg & orange; mix until combined, scraping sides of bowl, as needed. Reduce mixer to low; gradually add dry ingredients, mixing until just combined. If dough seems a little on the soft side, refrigerate (up to 30 min.)
Step 5
Using med. cookie scoop (2T), scoop out dough; roll into balls. Place 2” apart on prepared cookie sheets.
Step 6
Bake (10-12 min.) until very lightly browned around edges, but still pale in the middle. Cool (5-10 min.) on cookie sheet; remove to cooling rack to cool completely.
Sweet Orange Glaze
Step 7
Whisk together powdered sugar, orange zest, & enough orange juice to achieve desired consistency (less juice for a thicker glaze, more for a thinner one). Spread glaze over top of cooled cookies; set at room temp. (30 min.)
Notes
Step 8
You can substitute orange zest & juice with lemon, lime, or even grapefruit for different flavored cookies.
Step 9
Feel free to fold in chocolate chips to the cookie dough. I would recommend 1C mini chocolate chips.
Step 10
Make-Ahead (Refrigerate Dough): You can refrigerate the dough, covered, for up to 2 days before scooping and baking. Allow it to sit at room temperature for approximately 20 minutes to make scooping easier.
Step 11
Make-Ahead (Freeze Dough): Scoop cookies; place on baking sheets. Place in freezer until balls of dough are completely frozen; transfer to freezer-safe zip-top bag. Freeze (up to 3 mo.) Bake from frozen, add a couple of min. to bake time.
Step 12
Make-Ahead (Freeze Baked Cookies): Fully baked, cooled, & iced cookies (icing fully set) can be frozen by placing on a baking sheet, placing sheet in freezer until cookies are completely frozen. Transfer cookies to an airtight container, separating layers with parchment or wax paper, & freeze (up to 3 mo.)
Step 13
Store at room temp. in airtight container (divide layers with wax paper so the cookies don't stick together).
