This cornbread casserole is our family's favorite around the holidays. It's brought by someone, usually me, to almost every event. It's less dry than traditional cornbread and it's super easy to make. Add fresh chopped jalapenos or hot sauce to spice it up. Use honey jiffy corn mix or just add honey to sweeten it up. It's easily changed to fit in with any meal.

Preheat oven to 375°. Notes:
**Because of the butter content in the mix, you should not need to grease your baking dish. **Any baking dish will work. Glass/pyrex, ceramic, metal, and disposable aluminum pans work.
**Do not drain your corn. **Do not make the jiffy corn muffin mix per its box instructions.
**Salt has never been necessary since most of the ingredients contain salt already, but add it if you like. In a large bowl, throw in all the ingredients. Mix the ingredients just until combined. Pour your mix into a large rectangular 9x13 baking dish. (I like to let my mix rise in the baking dish for about 5 mins before I put it in the oven.) Bake for about 1 hour and 20 mins, give or take. It will be golden brown on top. Test with a toothpick to be sure it's cooked through. Enjoy!
