Instructions

Step 1
Combine ingredients for pie crust. Push into pie plate and bake at 375 degrees for 8-10 minutes. For pie filling, whip heavy cream with sugar and vanilla until firm. Chill in the fridge. Mix pudding mix and milk until combined. Beat cream cheese in a separate bowl until fluffy, then add the pudding while mixing slowly. Add lemon juice as well. Using spatula, fold in half of the whipped cream. Scoop lemon pie filling into the pie crust. Smooth and top with remaining whipped cream. Top with extra cracker crumbs. Cover with wrap and chill for 2 hours.
