Roasted Red Pepper Chicken with Lemony Garlic Hummus

Ingredients
6 servings

1.25 poundsboneless skinless chicken thighs
cut into 1-inch pieces

1 cupsweet onion
or red, cut into 1-inch chunks

2 tablespoonsextra-virgin olive oil

½ teaspoondried thyme

¼ teaspoonfreshly ground black pepper

¼ teaspoonkosher salt
or sea

1 x 12 ounceroasted red peppers
jar, drained and chopped
Lemony Garlic Hummus
or a 10-ounce container prepared hummus

3whole-wheat pits breads
cut into eighths
Instructions
Step 1
Line a large, rimmed baking sheet with alu- minum foil.
Step 2
Set aside.
Step 3
Set one oven rack about 4 inches below the broiler element.
Step 4
Preheat the broiler to high
Step 5
In a large bowl, mix together the chicken, onion, oil, thyme, pepper, and salt.
Step 6
Spread the mixture onto the prepared baking sheet.
Step 7
Place the chicken under the broiler and broil for 5 minutes.
Step 8
Remove the pan, stir in the red peppers, and return to the broiler.
Step 9
Broil for another 5 min- utes, or until the chicken and onion just start to char on the tips.
Step 10
Remove from the oven.
Step 11
Spread the hummus onto a large serving platter, and spoon the chicken mixture on top.
Step 12
Squeeze the juice from half a lemon over the top, and serve with the pita pieces.

ingredient tip: Swap in shrimp, salmon, or cod to make this a broiled seafood meal instead. you can also add mushrooms or zucchini as the vegetables, but keep an eye in them, as they will cook faster than the onion.
