Ingredients

2 cupsall-purpose flour
2 teaspoonsbaking soda
1 teaspoonbaking powder
1 teaspoonsalt
2 teaspoonsground cinnamon
1 cupwhite sugar
¾ cupvegetable oil
or 1 cup if too dry
3eggs

2 cupsshredded carrots
1 cupflaked coconut
toasted
8 ozcan pineapple tidbits
or chunks in juice, drained
1 cupwalnuts
finely chopped and toasted
3 tablespoonsfresh ginger
minced

Instructions
Cake
Step 1
Preheat oven to 350°. Grease 2 (8-inch) round cake pans; line bottoms with parchment paper, and grease and flour paper.
Step 2
Stir together flour, baking soda, baking powder, salt, and cinnamon (first 5 ingredients).
Step 3
Whisk together sugar and oil in a large bowl until well blended. Add eggs, 1 at a time, whisking until blended after each addition. Add flour mixture, stirring just until blended. Fold in carrots, coconut, pineapple, walnuts, and ginger (last 5 ingredients). Spoon batter into prepared cake pans.
Step 4
Bake at 350° for 30 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 15 minutes. Remove from pans to wire racks; discard parchment paper. Cool completely (about 1 hour).
Frosting
Step 5
Beat goat cheese, cream cheese, and butter at medium speed with an electric mixer 2 to 3 minutes, until smooth, fluffy, and creamy. Gradually add powdered sugar and mix until combined.
Step 6
Split vanilla bean; scrape seeds into goat cheese mixture. Beat 30 seconds to 1 minute or until frosting is light and fluffy. Spread 1/2 cup frosting between cake layers; spread remaining frosting on top and sides of cake. Chill cake at least 1 hour. Before serving, press walnuts lightly into sides of cake.
