Frozen Dessert appropriate for Diabetics. No refined sugars used. Rum acts as flavoring but also raises freezing temperature for less ice crystals after being spun in an ice cream machine. You may omit the Rum if you like.

Step 1
Peel and core pineapple.
Step 2
In a food processor, blend pineapple to a puree. Pass through a colander to remove any seeds, but make sure all the fiber comes through, we only want to remove the dark bits. Add pineapple puree, mango, yogurt, rum, agave nectar and lime juice, blend until smooth. Refrigerate for at least 2 hours. Spin in ice cream machine. *Optional: Sprinkle with Tajin
