Combine all and simmer until sauce cooks down and is thick.

Directions for Cheese Sauce:

Combine all ingredients and cook on low, stirring constantly until cheese is completely melted.
Step 5
Roll filling in soft tortillas, place in greased casserole dish and cover with cheese sauce. Sprinkle a little shredded cheese on top if you want. Bake at 350 until cheese is slightly browned.
Step 6
Brown beef, and add onion, jalapeños and enchilada sauce. Cook down until sauce has thickened.

Set filling mixture to the side to cool.
Step 8
In medium sauce pan, add condensed milk, Velveeta cheese, diced green chiles and cream of mushroom soup. Constantly stir over low/medium heat until smooth.

Place mixture into tortillas and roll. Place rolled tortillas in a glass bakeware dish that has been lightly greased.
Step 10
Pour cheese sauce over the top of the tortillas. Add shredded cheese to the top if desired and bake for 20 minutes at 325 degrees.
Step 11
Serving suggestion: Top with sour cream and fresh jalapeño. Serve with Mexican rice and refried beans. You can substitute beef for chicken and it's wonderful as well.
