Orange Blend: Pumpkin Base Blend

From Missy Chase Lapine's "Sneaky Blends" cookbook. This will be helpful for other recipes from her book, which will be added to this Sneaky Veggie community. "If you can't find frozen pumpkin, pick up canned 100% pure pumpkin--not the sugary pie filling kind. it's a huge timesaver and nearly as nutritious as the frozen stuff. I use it all year long. If you're feeling ambitious and want to roast your won, halve and seed a small pumpkin, place it on a baking sheet, and pop it in a 350-degree oven for 40 to 50 minutes (depending on the size of the pumpkin), until it cuts easily with a knife. Just look for good eating types, like sugar pumpkins or baby bears; you don't want to wrestle the jack-o-lantern kind, nor would it taste very good."

Instructions

Step 1
Place the pumpkin in large heatproof bowl, and pour boiling water over it to thaw. Drain.
Step 2
Puree the pumpkin along with 2 to 3 tablespoons of filtered water until smooth, adding more water as necessary
