15-MINUTE TURKEY LASAGNE

A lasagne in 15 minutes? Is he having a laugh? Well, it seems a bit crazy but actually, yes, it is possible when you follow this recipe and take a few shortcuts. But don't be fooled - even though this dish is quick, it's not missing out on flavour.

Instructions

Step 1
Put a saucepan of water on to boil.
Step 2
Melt the coconut oil in a large frying pan over a high heat. Add the spring onions, garlic and turkey mince. Fry the ingredients for about 2 minutes, stirring only occasionally. After 2 minutes, get your wooden spoon stuck in to help break up the large chunks of mince.
Step 3
Continue frying and breaking up the mince until there are no large chunks left. Squeeze in the tomato puree and sprinkle in the sugar and oregano. Keep on frying and stirring over the high heat for 1 minute and then pour in the vinegar, letting it bubble up and evaporate to almost nothing.
Step 4
Now tip in the chopped tomatoes and bring the whole lot to a gentle simmer. Cook like this for about 2-3 minutes, or until you are certain the turkey mince is fully cooked through - all the meat should have turned from raw pink to cooked white.
Step 5
While the mince is bubbling away, slide your lasagne sheets into the boiling water and simmer for about 5 minutes, or until just tender.
Step 6
When you are sure the turkey is cooked, remove the pan from the heat.
Step 7
To serve, I like to lay a sheet of cooked pasta on the base of my pasta bowl, top with mince and then repeat the layers until I've used up all my pasta and mince mix. Finish with a scattering of basil.
