Instructions
Step 1
Prep the veg by slicing the peppers and onion into thin strips and dice the garlic
Step 2
Start by slicing your chorizo into small chunks and frying in a medium hot pan for 3 mins to release the juices
Step 3
Then add the prawns to the pan and stir and fry for a further 2-3 mins until cooked and remove the chorizo and prawns from the pan
Step 4
Add the onion and peppers to the pan and stir and fry for about 4 mins to soften before adding the diced garlic
Step 5
Stir and fry for another few mins before adding a splash of water and scraping the bottom of the pan
Step 6
Add in the passata and the creme fraiche and stir to combine in the pan
Step 7
Add all of the seasonings into the sauce and simmer on medium for about 10-15 mins to thicken
Step 8
Salt your pasta water and get it on to simmer for about 8 mins until al dente
Step 9
Once the sauce has thickened, add in the freshly chopped parsley and some of the reserved pasta water along with the drained pasta
Step 10
Stir to fully combine everything in the pan and finally finish by squeezing the fresh lemon juice over the whole dish
Step 11
Serve into four equal portions topping each one with some additional freshly chopped parsley
