Ingredients

For the cookies:
2 ½ cupsall-purpose flour
1 tspbaking powder
½ tspground nutmeg
1 ½ cupsgranulated sugar
1 cuppumpkin puree
1egg
1 tspbaking soda
1 ½ tspcinnamon
½ tspsalt
½ cupbutter
1 tspvanilla extract
For the icing:

Step 1
Preheat the oven to 350F and line a baking dish with parchment paper.

In a large bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt and set aside. In a large mixing bowl, beat the sugar and butter until well blended. Add the pumpkin, egg, and vanilla extract until well combined.
Step 3
Gradually add the flour mixture, mixing just until combined.
Step 4
Use a small cookie scoop (about the size of a tablespoon) onto the prepared baking sheet.
Step 5
Bake for 15-17 minutes or until edges are lightly golden and crisp. Allow to cool on the baking sheet for 2-3 minutes before removing to a wire rack to cool completely.
Step 6
While the cookies are cooling, combine the powdered sugar, milk, butter, and vanilla extract until smooth. Spoon or drizzle over the cooled cookies.
