Instructions

Step 1
Mix all the ingredients together using an electric food whisk.
Step 2
Check the mixture has a good drop
Step 3
Mix on high for at least 2 mins
Step 4
Add the mixture equally to the 2 tins.
Step 5
Cook on fan 170 deg C for 25-30 mins. Check the sponge is cooked using the bounce and screwer method.
Step 6
Leave to cool on the tins for 5 mins then remove and cover with clean tea towels and leave to cool on a baking tray.
Step 7
Cut the top off the least attractive sponge and layer with a good quality strawberry jam.
Step 8
Add the top sponge and dust with icing sugar.
