Instructions

Step 1
Combine the lemon zest, lemon juice, sugar, and butter in a bowl that can withstand heat.
Step 2
Place the bowl over a saucepan with simmering water, ensuring that the water doesn't touch the bottom of the bowl.
Step 3
Stir the mixture occasionally until the butter is completely melted.
Step 4
Whisk the eggs and egg yolk gently, then add them to the lemon mixture. Whisk until all the ingredients are thoroughly combined.
Step 5
Allow the mixture to cook for 10-13 minutes, stirring occasionally, until it becomes thick and creamy enough to coat the back of a spoon.
Step 6
Take the lemon curd off the heat and let it cool, stirring occasionally.
Step 7
Once cooled, place the lemon curd in the center of the puff pastry. Add 3 tbsp Yuza Honey and spread out evenly.
Step 8
For the puff pastry: Strips - With a sharp knife or pizza wheel, make diagonal cuts along both sides of the pastry.
Step 9
Overlap - Create a braided pattern by crossing the strips of pastry diagonally over the filling, making sure they overlap each other. When you reach the end, you can either overlap any extra strips or trim them off.
Step 10
Fold both ends of the pastry at the top and bottom over the filling to prevent it from spilling out while baking. Bake 20 min or until golden brown at 175 celsius degrees.
