Korean Rice Cake Tteokbokki (떡볶이)

Tteokbokki is a Korean spicy rice cake dish cooked in a spice sauce mixture along with fish cake, fish balls, boiled eggs etc. The recipe for the rice cake is also included here.

Instructions
Step 1
To make the rice cake at home, in a bowl mix both regular rice flour and glutinous rice flour ( glutinous rice flour helps with the chewy texture). Add the water little by little until the water is well combined. When the rice flour can be formed into a lump but not sticky or too dry then it is ready to steam. In the bottom of the steamer add muslin cloth and on top add the rice flour. Steam it on a high flame for 20-25 minutes.
Step 2
Take the rice flour out of the steamer then knead it while it is hot for about 10 minutes (don’t burn your hand so use gloves). Divide the dough into 5 portions, then roll out each of the dough into a long roll until it comes to your desired thickness. Cut the roll into 3 inch. Rub some sesame oil on the rice cakes so they don’t stick to each other.
Step 3
These can be frozen for up to a month.
Step 4
Now to make the stock, add all the ingredients in a pot and bring it to a boil, and simmer it for 5 minutes. Making this stock would definitely increase the flavor by a lot.
Step 5
If you don’t want to make the stock, feel free to add just water or Japanese instant dashi powder.
Step 6
In a bowl mix all the ingredients for the tteokbokki spice mix.
Step 7
In a large pan strain the stock, and add the spice mix, then bring it to boil.
Step 8
Add the rice cake and cook it for 5 minutes. Add spring onions cut into 3 inches and add them with the rice cake. Add your choice of fish cake, fish balls, boiled eggs and noodles etc.
Step 9
Cook everything together on a low to medium flame, until the rice cake is cooked through and chewy.
Step 10
When it is done, garnish it with some chopped spring onion, sesame seeds. If you like, add some mozzarella cheese on top and melt it over the boiler, and enjoy!
