This is the Lebanese way for skewers of beef and vegetables, Although it is easy to make, it needs to be done just right. Here is a recipe to get perfectly cooked vegetables and meat every time.

Instructions

Step 1
Mix the meat cubes and the lamb fat, salt, pepper, cayenne pepper, onion quarters and vegetable oil.
Step 2
Cover the meat cubes with the marination sauce and keep in the refrigerator for 4 to 12 hours, up to overnight.
Step 3
When ready to gril, put meat cubes, tomato cubes, and bell pepper slices on wooden or metal skewers, with two pieces of the lamb fat on each skewer.
Step 4
Grill the meat over the charcoal for 4 to 5 minutes and make sure to flip it until it's cooked from all sides.
Step 5
Serve it with grilled tomatoes, onions and Chili bread.

Prepare Chili paste Bread:

Mix the chili paste, pepper with oil and cumin.
Step 7
Pour one tablespoon of this mixture and spread over each loaf of pita bread.
Step 8
Sprinkle parsley and sliced onions over the pepper mixture, then press the loaf of bread well and grill the loaves over charcoal until they are well roasted.
Step 9
Cut the loaves of bread into quarters and place them at the bottom of the serving dish, then spread the grilled kebab skewers over them.
