Instructions
Prepare Cavatappi
Step 1
Preheat the oven to 375°F. Cook the cavatappi to desired doneness; drain and set aside.
Prepare Roux
Step 2
In a pot, melt butter over medium-low heat. Once melted, sprinkle in flour, whisking continuously until you have a paste; ~2 minutes. Add the milk; whisk until smooth. Add salt and pepper. Whisk. Simmer for 3-4 minutes until thickened. Reduce heat to low. Slowly add in cheeses— 1 1/4 cup of white cheddar, gruyere, fontina and 1/2 cup of parmesan, one by one, stirring well.
Bake Mac & Cheese
Step 3
Fold in the pasta and lobster. Transfer to a baking dish. Top with 3/4 cup of white cheddar. Bake for 20 minutes or until bubbly.
Prepare Panko Crumbs
Step 4
While baking, in a skillet, toast panko crumbs over medium high heat until lightly browned; ~2 minutes. Remove from the heat, add chili oil and mix until crumbs are well coated. Add parm, fried garlic and lemon zest (to preference). Mix again.
Lastly,

Sprinkle over mac and cheese then bake for an additional 5 minutes or until golden brown / crisp. Garnish with additional chives, if desired. Serve immediately.
