Step 1
- Preheat the oven to 425F. Line a 12-cup muffin tin with 6 paper liners. - Combine the oats and milk in a large bowl. - Lightly beat egg in separate bowl. - Add the maple syrup, oil, brown sugar, and eggs. Mix until combined. - Stir in the flour, baking powder, cinnamon, baking soda, and salt just until combined. - Divide the batter between the prepared muffin tins. - Bake for 7 minutes. Reduce the oven temperature to 350F and continue baking for 12 to 15 minutes or until the centers are springy to the touch. - Let the muffins cool in the tin for 5 minutes. - Remove to wire rack to finish cooling.
