Instructions
Step 1
Zest and juice lemon.
Step 2
Separate eggs
Step 3
Melt butter.
Step 4
Whip egg whites stiff but not dry.
Step 5
Combine sugar, flour, salt, egg yolks, and butter. Beat into a smooth paste.
Step 6
Beat in lemon juice and peel until smooth.
Step 7
Add milk, beating slowly.
Step 8
Fold egg whites into mixture and pour into pie shell. (OK to leave small lumps)
Step 9
Bake 40 minutes at 350° or until filling is firm.
