Instructions

Step 1
Short prep time - cut vegetables, measure out spices, get out a larg mixing bowl, a small bowl, spoon/fork, and medium/large baking sheet pan.
Step 2
Preheat oven to 400° F (200° C).
Step 3
Measure the spices in a small bowl. Measure out and add 2 tsp paprika, 1 tsp ground cumin, 1 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper, 1/2 tsp ground coriander, 1/4 cup olive oil, and 1 squeezed lime juice. Mix together with a spoon or fork.
Step 4
Prep and cut vegetables. Cut 1 medium/large yellow onion into longer slices. Cut 2 large bell peppers (any color) into longer slices. Cut chicken breasts into strips. Place cut onions, bell peppers, and chicken into large mixing bowl.
Step 5
Add mixed spices from small bowl into the large mixing bowl with the chicken and vegetables.
Step 6
Mix well with hands and/or utensil.
Step 7
Once mixed well and chicken with vegetables are thoroughly covered with seasoning, spread out onto baking sheet pan. Spread apart so there is little overlap.
Step 8
Roast in oven at 400° F (200° C) for 13 - 15 minutes.
Step 9
Check on it half way through timer and flip if necessary. Optional - Broil near the end of time if you want it a little crispy or darker.
Step 10
Serve when ready.
