Why am I not eating all my meals out of a potato? Seriously this was amazing!!!
Do you guys have any other ideas of what meals can be ~potatoed~ because if so let me know.

Step 1
Preheat the oven to 400ºF.

Wash the potatoes but don't skin them. In a small bowl, rub the potatoes with oil, salt, pepper, and garlic powder. Put the potatoes on a baking sheet and cook for 50 minutes to 1 hour.
Step 3
Dice the bell pepper, white onion, tomato, and jalapeno.
Step 4
30 minutes after putting the potatoes in the oven, heat oil on a large skillet over medium high heat. Add in the diced vegetables and mix for 5 minutes. Then, add in the ground turkey and mix. It should be cooked after around 6-8 minutes. Add in the seasonings (salt, paprika, umami seasoning, oregano).
Step 5
Take the potatoes out of the oven. Cut the top off the potatoes and scoop out most of the inside. Add in the ground turkey taco mix.
Step 6
Grate some cheese and sprinkle on top of the potato taco. We put it back in the oven for another 5 minutes to melt the cheese. Then add avocado slices and enchilada sauce to serve.
