My favorite thing about this meal is that from start to clean up it only takes about 10 minutes.
1 pound raw tail on shrimp
2 cups sliced zucchini
2 cups sliced yellow squash
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
4 cloves crushed garlic
1/2 a lemon juiced
1/4 cup fresh chopped parsley
In a large bowl combine squash, zucchini, shrimp, olive oil, salt, red pepper, and garlic. Mix well to combine and place onto a foil lined sheet pan. Bake at 400° for six minutes squeeze fresh lemon juice on top with a sprinkle of parsley and enjoy!
