Instructions

Step 1
Preheat oven to 450 with rack in the lower third

Step 2
Finely chop garlic. Trim stem end from broccoli and cut into 1" florets. Halve potatoes lengthwise and cut crosswise into 1/2" half moons. Toss with 2 tablespoons oil, salt, and pepper. Spread in a single layer on a rimmed baking sheet and bake on lower rack for 18-20 minutes.
Step 3
Toss broccoli with 1 tablespoon oil, salt and pepper. Flip potatoes and move to one side of baking sheet. Place broccoli on open side and return to oven. Roast until veggies are golden brown, 10-15 minutes. Remove from oven and toss broccoli with half of the chopped garlic directly on baking sheet.
Step 4
Pat chicken dry, then season all over with poultry seasoning, salt and pepper. Heat 1 tablespoon oil in a medium skillet. Add chicken and cook until cooked through and brown on both sides, about 3-4 minutes per side. Transfer to a plate.
Step 5
To same skillet over medium heat, add remaining chopped garlic and 1 teaspoon flour. Cook, stirring until fragrant, about 30 seconds. Stir in apple juice and bring to a simmer, cook until thickened, 5-7 minutes. Stir in butter and vinegar until melted.
Step 6
Return chicken to skillet with sauce, turning to coat. Cook until warmed through. Serve roasted potatoes with chicken over top and broccoli on the side. Spoon apple cider sauce over top.
