G - Crispy Bacon, Lentil & Avocado Salad

For a speedy, satisfying salad, you'll toss crispy bacon and sweet chilli jam with warm lentils and creamy avocado. To serve, top with feta and pumpkin seeds for crunch. Sizzle, drizzle, done!

Instructions

Step 1
Heat a large, dry, wide-based pan (preferably non-stick) over a medium-high heat
Step 2
Once hot, add the smoked streaky bacon to the pan and cook for 3-4 min on each side or until golden and crisp
Step 3
Once the bacon is crisp, add it to a plate lined with kitchen paper and set aside, reserving the pan
Step 4
Meanwhile, drain the canned lentils
Step 5
Cut the avocado in half lengthways, around the stone
Step 6
Remove the stone using a teaspoon
Step 7
Scoop the avocado out of the skin using a spoon and then mash with a fork.
Step 8
Return the reserved pan to a medium-high heat with any remaining oil and add the drained lentils along with half of the chilli sauce (you'll use the rest later!) and a pinch of salt and pepper – these are your hot lentils

Mix it all together and cook for 1-2 min until warmed through
Step 10
Whilst the lentils are cooking, add the remaining chilli jam to a bowl along with the cider vinegar and 1 tbsp olive oil and give it a good mix up – this is your chilli jam dressing
Step 11
Transfer the crispy bacon to a board and chop roughly
Step 12
If unwashed, wash the rocket, then pat it dry with kitchen paper
Step 13
Add the hot lentils to a bowl with the rocket and half of the crispy bacon (you'll use the rest for garnish!) and give everything a good mix up – this is your crispy bacon & lentil salad

Serve the crispy bacon & lentil salad with the mashed avocado dollopped on top.
Step 15
Crumble over the feta and drizzle with the chilli jam dressing
Step 16
Top with the pumpkin seeds and remaining crispy bacon
