Step 1
Preheat oven to 350 F
Step 2
Cook sausage in a skillet on the stove with the chopped bell pepper and onion.
Step 3
In a large bowl, whisk together the eggs, milk, and mustard, until well combined.
Step 4
Add in pork rinds and stir until they are coated.
Step 5
Add sausage mixture and half of the cheese to the bowl and mix until everything is combined.
Step 6
Pour into a lightly oiled 13x9 baking dish. Top with remaining cheese.
Step 7
Bake for 45 min. Let cool for 10 min before serving.
