Instructions
Step 1
Preheat oven to 350°F or 175°C.

Step 2
Whisk together flour, sugar, cocoa, baking powder, and salt in a mixing bowl.

Step 3
Add eggs, coffee, oil, and vanilla. Mix until well incorporated.

Step 4
Add chopped walnuts. Mix using a baking spatula until evenly distributed.

Step 5
(If you like add 1/3 cup chopped walnuts if you like more walnuts.) (OPTIONAL)
Step 6
Using a ladle, pour the batter into paper-lined muffin pan cups.


Step 7
Sprinkle additional chopped walnuts on top of each muffin cup. (If you don't want any additional walnuts on top you can always swap an sprinkle some chocolate chips on top of muffins or if you desire simply add both :) )
Step 8
Bake for 20 to 25 minutes or until a cake tester or skewer inserted in center of one muffin comes out clean.


Step 9
Remove and let cool for 5 minutes before moving to a cooling rack
