These Crumbl caramel popcorn cookies are the ultimate movie theatre-inspired cookie out there. Made with a thick buttery cookie base then topped with a smooth caramel frosting, caramel corn, and a generous drizzle of caramel on top.

Ingredients

½ cupbutter
softened

3 Tbspbrown sugar
1egg
at room temp
2 tspbutter vanilla emulsion
Use regular vanilla instead if you don't have this but I highly suggest you grab a bottle
½ tspcaramel flavoring
1 ½ cupAP flour
¼ tspsalt
1 tspbaking powder
3 ozcream cheese
softened
2 Tbspbutter
softened
2 Tbspcaramel sauce
cold
â…” cuppowdered sugar
1 tspvanilla
0.33Caramel corn
¼ cupcaramel sauce
Instructions
Preheat oven to 350°F
Step 1
line a baking sheet with parchement paper and set it aside.
Step 2
Cream the butter, granulated sugar, and brown sugar together until smooth and creamy.
Step 3
Whisk in the egg, and the butter vanilla emulsion, caramel flavoring (optional), and mix until combined.
Step 4
Mix in the flour, baking powder, salt until the flour mixture disappears. Don't overmix your dough. Then using a large cookie scooper scoop out 6 equally sized cookie dough balls, place them on the prepared baking sheet, and gently flatten them to about ¾ inch in thickness.
Step 5
Bake (12 min.); cool on baking sheet (10-15 min.); Transfer to cooling rack to cool down fully.
Caramel Buttercream
Step 6
Whip cream cheese & butter until smooth & fluffy. Add powdered sugar, caramel extract, & vanilla; whip (4-5 min.). Start slow then increase speed until the frosting is light & fluffy.
Step 7
Frost cookies with buttercream; top with some caramel corn & a generous drizzle of caramel.

Store these cookies in an airtight container in fridge (up to 7 days).
Step 9
Because they have cream cheese frosting it’s better not to leave them out at room temp. If you do prefer to leave them out at room temp., leave unfrosted in an airtight container. Frost them when ready to enjoy!
