Instructions
Step 1
Get a bowl over a pan of simmering water on for making the curd.
Step 2
Add Egg yolks,1 cup caster sugar, Lemon juice + zest.
Step 3
Cook approx 10 mins whisking continuously.
Step 4
Add cornflour paste, cook out 5 min, stiring until thick.
Step 5
Remove from heat and transfer to another bowl, cover and chill in fridge until completely cooled.
Step 6
Whisk up Egg whites in a clean bowl with 2tbs caster sugar until it reaches #teamstiffpeaks !!!
Step 7
Chill in fridge while you prepare the rest.
Step 8
Whip up cream until thick
Step 9
Once everything is well chilled get 6-8 serving pots (I used the family china!)or some small individual pots to go in the freezer, it's also nice semi frozen.
Step 10
Take your 3 bowls from the fridge and slowly fold the whites and cream in to the lemon curd
Step 11
Pipe in to your pots and chill or freeze until required, goes beautifully with a couple of lemon shortbread biscuits
