3 Ingredient Cashew Butter Cookies

Legit magic. It’s the only cookie recipe you’ll ever need, they are soft and buttery and delicious and so easy to make. It works with peanut butter and cashew butter.
Note - this recipe uses PURE monk fruit powder, not "monk fruit sweetener" which contains a base of erythritol.

Instructions
Step 1
Preheat the oven to 160℃ and line a baking tray with baking paper.
Step 2
In a large bowl and using a wooden spoon, combine cashew butter, pure monk fruit powder and egg. You may wish to use your hands if it is not combining properly.
Step 3
Using your hands, carefully shape into cookies (using about 1 tbsp of dough per cookie) and place on the prepared tray. Use a fork to imprint the cookie.
Step 4
Bake in the oven for 15 minutes. Leave to cool completely before removing from the tray. They will be crumbly straight out of the oven.
