Step 1
1. Preheat oven to 425. Melt butter and shortening in a 15x10x1-inch pan in the oven.

2. In a shallow dish, combine biscuit mix, paprika, salt and pepper. Coat chicken with dry mixture. Place chicken skin-side down in melted fat mixture in pan.

3. Bake uncovered 30 minutes. Turn chicken. Bake about another 20 minutes or until juices run clear when thickest pieces are cut to the bone (at least 165 if using a meat thermometer).

Step 4
If desired, mix up enough biscuit mix to make a batch of drop biscuits. Add to pan when turning the chicken by pushing the chicken over to one side of the pan and bake during the last 10 to 12 minutes of chicken baking time.
