EggNog Pie
Everyone loves eggnog, so why not make an Eggnog Pie. Its an easy pie to make and pretty much "no fail" since the filling cooks on the stove. (You need to "blind bake" an empty pie shell.)

Instructions
Step 1
Prepare pastry for a single crust pie and place into pie plate. Blind bake pie shell for 15-20 minutes at 375 degrees until golden brown. Allow to cool before filling.
Step 2
In a small bowl, sprinkle gelatin over water; let stand 1 minute. In a saucepan, combine the sugar, cornstarch, and salt. Stir in eggnog until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in gelatin until dissolved. Remove from the heat; cool to room temperature.
Step 3
Stir in extracts; fold in whipped cream. Pour filling into pre-baked crust. Refrigerate until firm. If desired, dust pie with cinnamon or nutmeg.
