Instructions
Step 1
Whisk 4 qts water, soy sauce, and salt together in Dutch oven until salt is dissolved. Arrange chicken, skin side up, in a steamer basket, submerge in brine, and let sit at room temp 30 min.
Step 2
Heat pot over med heat until water registers 175, 15-20 min. Turn off heat, cover pot, and let sit until chicken registers 160, 17-22 min.
Step 3
Transfer chicken to a cutting board and rest for 5 min.
