Easy and Flavorful Poached Chicken

This is my favorite way to make tender, juicy, healthy chicken for use throughout the week. Throw the chicken into soups, salads, casseroles, or whatever else you'd like. When done correctly, this technique always results in flavorful chicken!

Instructions

Step 1
Place chicken in saucepan and cover with water. Add sliced celery, green onion, garlic, ginger, and salt.
Step 2
Place saucepan on burner and bring to a gentle boil. Once boiling, lower heat and cook for 8 minutes. The GENTLE boil is crucial to keeping the chicken tender and juicy.
Step 3
After 8 minutes, turn off the heat, cover the saucepan, and keep on the warm burner for 10 minutes.
Step 4
After 10 minutes, remove chicken and plunge in ice bath.
Step 5
Once cool enough to handle, shred the chicken.
