Ingredients

2 teaspoonsextra-virgin olive oil
1 ⅓ cupsGranny Smith Apple
finely chopped, peeled
1 cupcelery
finely chopped
¼ cuponion
finely chopped
1lemon
1.5 poundsground turkey
1 teaspoonsalt
1 teaspoonground black pepper
1egg white

1 teaspoonhot pepper sauce
optional
cooking spray
whole-wheat hamburger buns
½ cupplain Greek yogurt
2 tablespoonsmango chutney
1 ½ cupsfresh baby spinach
Instructions
Step 1
Heat a large nonstick skillet over medium-high heat.
Step 2
Add oil; swirl to coat.
Step 3
Add apple, celery, and onion; sauté 5 minutes or until tender.
Step 4
Remove from heat, and cool completely.
Step 5
Grate rind and squeeze juice from lemon to measure 2 teaspoons rind and 1 tablespoon juice.
Step 6
Combine apple mixture, lemon rind, lemon juice, and turkey.
Step 7
Sprinkle with salt and pepper
Step 8
Add egg; mix gently just until combined.
Step 9
Add hot pepper sauce, if desired.
Step 10
Shape into 6 (.5-inch-thick) patties.
Step 11
Cover and refrigerate 2 hours or until thoroughly chilled.

Preheat grill to high heat.
Step 13
Place patties on grill rack coated with cooking spray.
Step 14
Grill 5 minutes on each side or until done.
Step 15
Place buns, cut side down, on grill rack.
Step 16
Grill 1 minute or until toasted

Combine yogurt and chutney.
Step 18
Place patties on bottom halves of buns; top each patty with .25 cup spinach and about 4 teaspoons sauce.
Step 19
Cover with top halves of buns.
