Instructions

Step 1
zest and juice orange (save both in separate containers)
Step 2
Combine the apricots, 1/4 cup of the coconut, orange zest and juice, vanilla and a tiny pinch of salt. Blitz in a food processor until finely chopped, uniform and cohesive.
Step 3
Place the remaining 1/2 cup of coconut in a wide shallow bowl
Step 4
Roll 1 tablespoon-sized balls of the apricot mixture in the coconut bowl. This should produce 15-16 balls.
Step 5
Place on a plate to dry out for 45 minutes
