Instructions
Step 1
Mix coconut, sugar, flour, and salt in a large bowl.
Step 2
Add egg whites and extract; mix well.
Step 3
Drop tablespoon balls of dough onto parchment paper covered cookie sheet.
Step 4
Bake at 325 F for 20 minutes or until edges of the cookies are golden brown. Immediately remove from baking sheet to a wire rack. Cool completely.
Step 5
When the cookies are cooled dip each in melted chocolate.
