Instructions

Step 1
Fry bacon until crispy, cool on paper towels and crack into pieces. Save the fat!
Step 2
Combine bacon fat (may want to let it cool slightly), flour, salt, & pepper in a 5-qt casserole. Whisk together evenly and thoroughly. Very gradually and thoroughly whisk the half and half, mustard, and Worcestershire sauce into the flour mixture until smooth.
Step 3
Microwave the sauce uncovered on HI. Stop and whisk every 30 seconds, for 3 minutes, until smooth and thickening. Whisk the 12 oz cheese into the sauce until melted. Taste test and add more salt/fat/pepper/mustard/cheese as desired.
Step 4
Meanwhile cook the macaroni according to the box directions. Drain well and stir the macaroni, bacon, and veggies into the cheese sauce until well blended. Scatter shredded cheese, bacon pieces, and cracker crumbs evenly over the top.
Step 5
Bake uncovered for 10-15 minutes or until browned and bubbling.
Step 6
*ADD HALF THE CHEESE TO SAUCE AND USE THE OTHER HALF ON TOP
