Botswana Cinnamon Pumpkin

I do not think I have ever tasted a dish or visited a country that does pumpkin better than the way it’s done in Botswana. You will find pumpkin in all its varieties, especially butter nut, prepared and served at the grandest of events such as weddings, anniversaries, and yes, even independence day. Pumpkin is known locally as lephutshi, lephutshe, lephutsi, lephutse all depending on which tribe or dialect of Setswana you speak. This can be eaten with rice, meat, potato salad and even as a side at a barbecue. Enjoy!

Instructions

Step 1
Cut pumpkin into inch sized chunks. Parboil the pumpkin in salted water with the cinnamon sticks and sugar very briefly as it can soften quickly.
Step 2
Heat up the frying pan, melt the butter and add the strained pumpkin pieces in a single layer to avoid crushing them. Reduce the heat so that the pumpkin does not get too brown. Turn over to allow other side to brown.
Step 3
Enjoy served as a side dish to your favourite meal.
