Instructions

Step 1
Find potatoes around the same size and try to leave them whole. The more you cook them the more the potato flavor leaches into the water. Add potatoes to pot with cold water, add a hefty pinch of salt, and bring it up to boil together.
Step 2
While the potatoes are cooking, smash the cloves of garlic, cut the shallot in half, and add it to a pot with the milk and cream. Add the bay leaf and thyme and let it steep on really low heat.
Step 3
Once the potatoes are fork tender, you can mash them anyway you want. Brandon likes to keep it rustic and just use a spoon. Mash the potatoes, put them back in the pot, let all the moisture evaporate and then start adding butter.
Step 4
Once the butter is worked in, start slowly adding your milk. Right at the end, fold in sour cream. Season it up all the way with salt and pepper.
Step 5
Transfer to serving dish and top with the brown butter from the green bean casserole recipe and chives.
