Easy Summer Pasta Salad - a picnic favorite!

Note: pasta tastes even better if made night before an event. That gives the flavors time to really become intense.

Step 1
Cut up head of cauliflower into one inch pieces and boil until soft. Set aside and let cool.
Step 2
Boil two bags of pasta noodles. Add to large bowl.
Step 3
Drain and add olives. Cut raw red bell pepper into strips and add. Drain and add mushrooms and baby corn. Partially drain artichoke hearts and add to pasta. Add cooled off cauliflower florets. Mix together.
Step 4
For the salad dressing - drain oil from the top of the dressing bottle and use more concentrated flavor at bottom. I recommend Newman's Own brand Italian for this. Add about 1/2 dressing and pepper - stir and taste. You want to coat the pasta but not have it swimming in oil.

Serve and enjoy!
