Instructions
Step 1
Preheat the oven to 180c / 160c fan / gas 4. Grease and line a 2lb loaf tin.
Step 2
Beat together the butter and sugar until light and fluffy, mix in the banana and beat again.
Step 3
Pour in the egg a little at a time until fully added. Mix together the flour, baking powder and salt before folding into your mixture. Add a splash of milk if necessary for a soft dropping consistency.
Step 4
Pour your batter into the loaf tin and bake for 45-50 mins until golden brown and a skewer comes out clean. Allow to cool completely on a wire rack before taking out of the tin.
Step 5
Decorate with a sprinkle of icing sugar or simply serve warm, thickly sliced with a dollop of Greek yogurt.
Step 6
Extra tasty idea: top with cream cheese frosting.
