Instructions

Step 1
If using refrigerated or frozen pork, defrost meat until it is room temperature.
Step 2
Preheat oven to 350°F.
Step 3
Trim fat from pork loin (and veal, if using).
Step 4
Cut pork loin into 0.5 inch cubes (if using veal as well, cut into similar sized cubes).
Step 5
Season to taste with Lawrys seasoning salt, iodized salt, black pepper, granulated garlic powder, and parsley. With 4 lbs of meat, start with 3 tbsps of each.
Step 6
Skewer the meat, packing together but not too tightly.
Step 7
In a large container (fit to lay the skewers in), whisk the eggs.
Step 8
In another large container of the same size, add a generous layer of breadcrumbs.
Step 9
Lay the skewers in the egg mixture, making sure all sides of the meat are covered well.
Step 10
Place the skewers in the breadcrumbs container and generously coat all sides. Set aside.
Step 11
Repeat until all meat is covered well.
Step 12
In a skillet, add enough oil to cover about half of the width of meat (about 0.25 inch) and heat to medium low heat.
Step 13
Once heated, place skewers into the pan, arranging skewers next to each other. Do not overcrowd pan.
Step 14
Add some breadcrumbs over the skewers, cover the pan, and fry for 7 minutes.
Step 15
Turn skewers and fry for another 7 minutes covered.
Step 16
Turn skewers one last time and fry for another 2 minutes covered.
Step 17
Remove batch of skewers and set aside.
Step 18
Once done, place the skewers into an oven ready baking dish, adding the oil used to fry and water to cover about half of the meat. Cover dish with foil.
Step 19
Once oven is heated, load the baking dish into the oven and bake for an hour.
Step 20
At about 40 minutes in, open foil enough to baste the skewers with the oil mixture and cover again. Continue baking.
Step 21
Check if meat is fully cooked (oil mixture will look like a gravy). If not, add back to the oven and bake until fully cooked.
Step 22
Remove from oven, plate, and enjoy! Good served with a side of mashed potatoes.
